Fish Processing & Handling Services

Each service below clearly states whether pricing is based on the GROSS (whole fish) weight or the NET (finished fillet or quarter) weight.
Net weight reflects the actual edible product after processing. Final yield varies by species and size.

Individual Processing Services (À La Carte)

(Services are listed in typical dock-to-freezer order. Any service may be selected individually or added to a package.)

Whole Fish Breakdown

Pricing Basis: GROSS weight (whole fish)

Price:

  • Under 20 lbs: $0.85 / lb

  • 20–49 lbs: $0.75 / lb

  • 50–99 lbs: $0.65 / lb

  • 100 lbs+: $0.55 / lb

Includes Initial Breakdown & Disposal:

  • Gut removal

  • Gill removal

  • Head removal

  • Disposal of guts, gills, heads, and processing waste

  • Fish prepared for quartering or filleting

Important:
Descaling is NOT included.
Some species must be descaled prior to filleting. Descaling requires additional labor and cleanup time and is charged separately.

Quartering / Filleting (Skin-On)

Pricing Basis: GROSS weight (whole fish)

  • Standard Species — $2.00 / lb
    Examples: Kanpachi, Mahi Mahi, Ono (Wahoo), and other easy-to-process pelagic species

  • Complex Species — $2.50 / lb
    Examples: All Tuna species, Marlin, Swordfish, Bottomfish (Snapper, Uku, Onaga, Opakapaka, etc.)

Additional species fall within each category. Final classification is based on processing complexity, handling requirements, and labor involved.

Descaling (Required for Certain Species)

Pricing Basis: GROSS weight (whole fish)
Price: $0.75 / lb

Required for scaled species prior to filleting.
Charged separately due to increased labor and cleanup time.

Skin Removal

Pricing Basis: NET weight (fillets or quarters)
Price: $0.75 / lb

Deboning

Pricing Basis: NET weight (fillets or quarters)
Price: $2.00 / lb

Includes pin-bone removal and structural bone cleanup.

Steak Cutting or Portioning

Pricing Basis: NET weight (fillets or quarters)
Price: Market rate — typically $2.25–$3.00 / lb

Choose one:

  • Cross-cut steaks (bone-in or boneless, 1–2” standard)

  • Boneless meal-size portions (standard 1-lb packages unless otherwise requested)

Poke / Sashimi Block Cuts

Pricing Basis: NET fillet weight

Center-cut loins prepared for poke or sashimi use.

Custom Labeling

Pricing Basis: Per package or flat rate

  • $50 flat — unlimited packages

Insulated Packaging

Pricing Basis: NET product weight

Insulated materials and reinforced packing to help maintain temperature during transport or short-term travel.

Ice Gel Packs

Transport & Delivery

Pricing Basis: Flat rate

  • Local delivery: $75 (Within Kona - Can meet at the Matsuyamas Gas Station on the Highway near the Airport in Kona)

  • Extended delivery: $125+

  • Custom delivery / shipping: Quoted as needed

  • Waiting time: First 10 minutes included, then $1.50 per minute

Orders must be placed at least 24 hours in advance. Rush requests (under 24 hours) incur a late order fee of $100 and run the risk of product availability concerns that are out of our control so last minute.
